Delicious Roast Chicken


Everyone loves Roast Chicken, just the aromas wafting through the house as it cooks are enough to get everyone heading into the kitchen to find out when dinner’s ready.
So I cook one every week, at least.
And here’s my latest;
All I did was place the chook on a rack in a roasting dish with 1 litre water in the dish.
Then i squeezed a whole lemon over the chicken. I grated a large knob of ginger, turmeric and 2 garlic cloves, mixed that with a handful of chopped parsley and 1 tbsp olive oil and spread that over the chicken.
I placed the lemon halves and any pulp from the grated spices, inside the chicken, seasoned it generously, then roasted it for around 1 hr 10 mins at 180C, or until cooked.
I served this delicious gem with some baked sweet potatoes and a cabbage and red onion slaw.
Verdict? 4 people, no leftovers!
